Our steers are sold on a per pound live weight basis, and they run between 1100-1400 lbs depending on time of year they are sold. A very rough estimate can be calculated from that after you contact us for current pricing/lb. Then, you would add $400 (half) - $800 (whole) for your custom cut and wrapped butcher bill.
Another very broad generalization, but we have found our customers are receiving 400 lbs (half) - 800 lbs (whole) put into their freezers.
A general rule is that one needs 1 cubic foot of freezer space for every 35-40 pounds of cut and wrapped meat.
In order to sell what is called retail cuts, the animal must be harvested and processed at a USDA inspected facility and between distance to said facilities and costs incurred, it is more valuable for our customers to enjoy freezer beef.
The other reason is because of our size. We are a very small operation, in which we know the names of our animals off the top of our heads, and really can not justify the cost to our consumers in order to sell one steak at a time. The entire animal's beef is delicious and nutritious, and we are more than happy to give out cooking methods, recipes, and advice so our customers can appreciate their wholesome product!
Lastly, it does not suit our family and company. Large facilities have worked with the USDA to create and lobby according to what makes the most money for the corporations, and have made it close to impossible to make small butcher facilities feasible for families like ours. To be frank, we care, so much that we don't want to be controlled by a government entity when we go above and beyond the standards for safety, cleanliness, and humane handling.
